Mini zucchini pizza with roasted pine nuts & Linus lager
for 12 persons

  1. 1 onion
  2. 1 bay leaf
  3. 1 sprig of thyme
  4. ½ hand flat parsley
  5. 2 cloves of garlic
  6. ½ red pepper
  7. 1 ts concentrated tomato paste
  8. 2 large tomatoes
  9. 1 small zucchini
  10. 1 glass of white wine
  11. salt
  12. ½ cayenne pepper
  13. 1 ts soft paprika powder
  14. pine nuts
  15. Parmesan
  16. olive oil
  17. ready-made pizza dough
  18. flour
  19. fresh arugula.
  1. Fry the finely chopped onion for 1 minute in olive oil and add the bay leaf, a sprig of thyme and the chopped parsley. Then add the chopped bell pepper, zucchini, crushed garlic and a small spoon of tomato paste and continue to fry well for a few minutes
  2. Add the white wine and reduce the mixture to half. Now add the diced tomatoes (skinned and pitted) and cook well for 8 minutes. Season with paprika powder, cayenne pepper and salt
  3. Remove the mixture from the heat, remove the bay leaf and the sprig of thyme and cool down until lukewarm
  4. Spread some flour on your work surface and roll out the ready-made pizza dough with the rolling pin until thin
  5. Use the dosing ring to cut rounds from the dough and puncture them with a knife or fork. Now put 1 tablespoon of the mixture on each mini-pizza and finish with some fresh arugula and pine nuts. Grate plenty of Parmesan over it and drop some olive oil over the pizzas
  6. Bake the pizzas for 10 minutes in a preheated oven at 240° C. To get a nice crispy crust, put them under the grill at the end
  7. Finish the pizzas with extra virgin olive oil and roasted pine nuts
Lager beer usually has an alcohol content of 4.8° to 5.2°. With its 5.4° this Linus lager beer is in the top range. It has an elegant foam head and fine carbonated pearls. With this slightly more bitter and full-bodied lager We serve a vegetarian pizza with a nutty character. The distinct flavors of arugula, pine nuts and Parmesan go very well with this beer from brewery Van Hellemont.
