Mini zucchini pizza with roasted pine nuts & Linus lager

Ingredients
- 1 onion
- 1 bay leaf
- 1 sprig of thyme
- ½ hand flat parsley
- 2 cloves of garlic
- ½ red pepper
- 1 ts concentrated tomato paste
- 2 large tomatoes
- 1 small zucchini
- 1 glass of white wine
- salt
- ½ cayenne pepper
- 1 ts soft paprika powder
- pine nuts
- Parmesan
- olive oil
- ready-made pizza dough
- flour
- fresh arugula.
Preparation
- Fry the finely chopped onion for 1 minute in olive oil and add the bay leaf, a sprig of thyme and the chopped parsley. Then add the chopped bell pepper, zucchini, crushed garlic and a small spoon of tomato paste and continue to fry well for a few minutes
- Add the white wine and reduce the mixture to half. Now add the diced tomatoes (skinned and pitted) and cook well for 8 minutes. Season with paprika powder, cayenne pepper and salt
- Remove the mixture from the heat, remove the bay leaf and the sprig of thyme and cool down until lukewarm
- Spread some flour on your work surface and roll out the ready-made pizza dough with the rolling pin until thin
- Use the dosing ring to cut rounds from the dough and puncture them with a knife or fork. Now put 1 tablespoon of the mixture on each mini-pizza and finish with some fresh arugula and pine nuts. Grate plenty of Parmesan over it and drop some olive oil over the pizzas
- Bake the pizzas for 10 minutes in a preheated oven at 240° C. To get a nice crispy crust, put them under the grill at the end
- Finish the pizzas with extra virgin olive oil and roasted pine nuts
