Chicken wings with smoked bacon, sour tomato sauce, gremolata & Geuze Boon

Ingredients
- 1 shallot
- olive oil
- 2 tbsp of herb vinegar (for example tarragon vinegar)
- 250 ml beef broth (1/2 cube)
- 4 sundried tomatoes
- 8 pickled gherkins
- 1 large tomato
- 1 tbsp of chopped parsley
- sugar (optional)
- 6 chicken wings
- 30 grams of smoked bacon cubes
- 2 tbsp of grain mustard
- pepper and salt
- 1 clove of garlic
- 1 tbsp of chopped parsley
- 2 tbsp of bread crumbs
- 1 ts of finely chopped lemon zest
Preparation
- preheat the oven to 180° C
- peel and finely chop the shallot
- stew the shallot in olive oil and quench with the vinegar and beef broth
- chop the sundried tomatoes and gherkins, dice the tomatoes, chop into cubes and add, together with 1 tablespoon of parsley, to the stewed shallot
- taste and season with salt and pepper and add some sugar if desired
- Pour the tomato sauce into an oven dish, bake the chicken wings together with the bacon cubes until golden brown in a frying pan and then scoop into the baking dish
- For the gremolata: peel and grate the garlic and mix with the parsley, bread crumbs and chopped lemonzest in a small bowl
- Smear the chicken wings with the grain mustard and sprinkle with the gremolata
- Place in the oven for 8 minutes, the last few minutes with the oven grill.

In the Geuze Boon you still taste the strong taste of the lambic. The typical aroma of cheese and stable is not uncommon for a traditionally brewed geuze, but it is often a letdown for the novice geuze taster. This slightly dry and soft acid geuze asks for a fresh food partner; because of its dominant character he begs for a flavor bomb. The smoked bacon, the sour tomato sauce, the grain mustard and the gremolata therefore are an outstanding match.
