  1. 2 eggs
  2. 8 cl Cointreau
  3. 6 cl lemon
  4. 2 cl sugar syrup
  5. ice (sufficient)
  6. wheat beer (Jan De Lichte)
  7. zest of pink grapefruit
  8. 10 drops of Angostura bitter
  9. rose petals
  10. mint flowers
Preparation
  1. Separate the egg white from the yolk
  2. Put the egg whites in the shaker and add the Cointreau
  3. Squeeze the lemon and add the juice
  4. Add the sugar syrup and shake all liquids thoroughly (without the ice)
  5. Add 10 to 12 ice cubes and shake vigorously for 10 seconds
  6. Pour through a sieve in a chilled cocktail coupe
  7. Top the cocktail with the wheat beer
  8. drizzle the cocktail with the essential oil of the grapefruit zest, rub the zest over the edge of the glass and add a few drops of Angostura
  9. Decorate with the rose petals and mint flowers

Jan De Lichte is an outstanding wheat beer which blends a high alcohol percentage with atypical hop bitterness. The cocktail was developed, based on the Bapas ABC beerpairing method: matching and contrasting ingredients were obtained from the beerpairing wheel. Cointreau, lemon and grapefruit elegantly complement the aromatic character of the beer. The spicy Angostura and the flavor of the flowers counter the Jan De Lichte wheat beer, while the creamy texture of the egg white brings everything together. Bartender Mike carefully balanced the ingredients to obtain this surprisingly refreshing cocktail "B-White. Cheers!
